Wheat, water and the art of waiting
For us at Conservo, pasta is not a simple accompaniment, but the foundation of every meal. We have chosen only ancient grain semolina and processes that respect the raw material: bronze dies to give that porosity that captures the sauce and slow drying at low temperatures, which preserves its aroma and nutritional properties.
Whether it's the Pici of Sienese tradition, the wide Pappardelle ready to embrace a wild boar ragù (I have no idea of the formats we have or could have, these are ideas) or the more classic formats, our pasta has a decisive personality and a color that tastes of ripe wheat.
